Sweet and Floral Spices: Vanilla, Saffron, and Lavender

Vanilla

Vanilla has its origins in ancient Mesoamerica. Many believe that the Totonac people of Mexico were the first to cultivate vanilla beans. They used vanilla to flavor a beverage made with cacao. The Aztecs would later pick this up. Vanilla would reach Europe after the Spanish conquered the Aztecs in the early 1500s.   

Uses: Vanilla is a versatile ingredient, which makes it useful in many culinary applications. Chefs can use vanilla in both sweet and savory dishes.

Baking: Vanilla extract is a baking ingredient. It adds depth to cakes, cookies, and pastries. 

Ice Cream: Vanilla ice cream is often made with vanilla beans. They are the seeds from vanilla pods. They give the ice cream a rich flavor.

Desserts: Vanilla can improve the flavor of custards, puddings, and other desserts. 

Health Benefits: Vanilla is rich in antioxidants. It has anti-inflammatory effects. People have used vanilla to aid digestion. It helps with nausea and settling an upset stomach.



Saffron

Saffron has a rich history that spans over 3,500 years. It is derived from the dried stigmas of the saffron crocus (Crocus sativus).  Saffron is believed to have its origins in such cultures as Iran (Persia), Greece, Mesopotamia, and Kashmir. It was highly prized for its vibrant color, unique flavor, and medicinal properties. It was used as a seasoning, dye, and religious ceremonies. Saffron is an expensive spice due to its harvesting which must be done by hand. Only a small portion of the saffron flower is used.

Uses:  Saffron can be paired with other spices like cardamom, cinnamon, cloves, coriander, cumin, and nutmeg. Saffron is used to add a distinct flavor and a rich golden-yellow color to dishes like paella, biryani, and risotto. 

Baking:  Saffron adds color and flavor to bread, pastries, and cakes.

Tea and Beverages:  Teas and other drinks use saffron for a subtle, aromatic taste.

Health Benefits: Traditional medicine has used saffron for centuries. It is known for its antioxidant, anti-inflammatory, and mood-enhancing properties. 

 

Lavender

Lavender is an herb that is native to the Mediterranean, Middle East and India. It has been used for at least 2,500 years. The ancient Egyptians used it for mummification and as a perfume. Many ancient societies like the Romans used it in their baths. By the Middle Ages in many areas of Europe, lavender was used to ward off illness and as a disinfectant. Lavender was grown in gardens by monks for medicinal and culinary purposes. Its use was popular among the European royalty. Today Lavender continues to be cultivated worldwide. 

Uses:  They add a floral flavor to sweet desserts, like cookies, cakes, and scones. It also adds a sweet flavor to salads, soups and meats. 

Teas and Beverages: Lavender buds are used in herbal teas and other beverages.

Essential Oils:  Lavender oil is used in aromatherapy. It is calming and relaxing. 

Health Benefits:  Lavender oil has anti-inflammatory properties. Ancient societies knew it was a good antiseptic. It's used to treat minor burns, insect bites, and provide pain relief.
