Aromatic and Warm Spices:  Cinnamon, Nutmeg, and Cloves

Cinnamon is a spice obtained from the inner bark of several tree species from the genus Cinnamomum. It has a complex flavor profile that can be a sweet, savory, and warm flavor. Cinnamon has been used as far back as 2000 BC and it was a highly prized commodity in the Middle East. The Middle Eastern spice traders brought it to Europe though the Romans and their involvement in the spice trade.

Uses:
This spice is widely used in both sweet and savory dishes, as well as in drinks. It is a common addition to baked goods like cinnamon rolls, cookies, and pies, and is frequently used to enhance the taste of hot beverages such as coffee, tea, and hot chocolate.

Cloves

Cloves are from the tropical evergreen tree of the family Myrtaceae. The small reddish brown flower buds in the tree are used as a spice. They are considered to be indigenous to the Moluccas, or Spice Islands, of Indonesia.Cloves were used in traditional medicines as tonics and stimulants.

Beverages: Whole cloves are added to beverages such as chai tea, mulled wine, and hot cider.

Savory Dishes: Incorporated into marinades, curries, and rice dishes in various cuisines.

Pickling: Commonly used in pickling spice blends for preserving vegetables and fruits.

nutmeg

Nutmeg is the seed, or the ground spice of Nutmeg trees of the genus Myristica that originated in Indonesia. Arab traders brought Nutmeg to Europe in the 14th century. It was known for its medicinal and culinary purposes. Just like other spices the Nutmeg trade would lead to trade wars between the Dutch, the English, and the French. Nutmeg has a slight sweetness, but is also considered to be a warming, peppery, and earthy.

Uses:
Nutmeg is meant to be used in any dish that requires cinnamon too.

Baking: It lends itself for use in pies, custard tarts, cookies, and cakes. 

Beverages: Often added to beverages like as eggnog and hot chocolate.

Savory Dishes: Nutmeg is often in partnership with cumin and allspice in savory blends. It is ideal for savory dishes such as béchamel sauce, mashed potatoes, and soups.

Desserts: Nutmeg is good for enhancing the flavor of custards, puddings, and fruit desserts.
